Laura, a pastry chef with serious credentials, spent years refining her craft as the head pastry chef at two-hatted Canberra institution Aubergine. When she and Zac relocated from Canberra to the Gold Coast in 2022, they transformed an old bakery in Chirn, Labrador into what is now Basque, a haven
for cheesecake lovers.

What the Basque is a Basque Cheesecake

This isn’t your average cheesecake. Taking its name from the Basque region of Spain, Basque cheesecake is baked at high heat to develop a beautifully caramelised crust while keeping the centre silky smooth. With no biscuit base, its structure relies entirely on that perfectly baked outer layer.
